Spring Beauties

Montia is about 30cm tall, covered with oval long stalk leaves. It's flowers are small and varies in the colors white and pink. It lives in sandy places.

Dig out the tubers (roots like) and peel them, then boil.
Young leaves are edible and supply Vitamins A & C.
